Instructions
- Prepare the batter: In a large bowl, mix together corn kernels, all-purpose flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and black pepper until well combined.
 - Add wet ingredients and cheese: Stir in grated Cotija cheese, chopped cilantro, the egg, and milk until a thick batter forms, ensuring all ingredients are evenly incorporated.
 - Heat oil: Pour about 1 inch of vegetable oil into a skillet and heat over medium heat until it reaches 350°F (175°C), ideal for frying the fritters to a golden crisp.
 - Form and fry fritters: Using a spoon, drop spoonfuls of batter into the hot oil. Flatten each slightly with the back of the spoon to shape the fritters evenly.
 - Cook fritters: Fry each side for 2-3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain excess oil.
 - Serve: Serve the fritters warm with lime wedges on the side and a sprinkle of additional Cotija cheese for an authentic finishing touch.
