Ingredients
Scale
Pastas and Proteins
- 12 ounces spaghetti
- 2 cups cooked shredded chicken
Dairy and Cheeses
- 1 (8-ounce) package cream cheese (softened)
- 1 cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Pantry and Seasonings
- 1 can (10.5 ounces) cream of chicken soup
- 1 can (10 ounces) Rotel diced tomatoes and green chilies (drained)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Optional Garnish
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Prepare baking dish and pasta. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking. Cook the spaghetti according to package directions until al dente, then drain and set aside.
- Mix creamy sauce base. In a large mixing bowl, combine the softened cream cheese, sour cream, cream of chicken soup, drained Rotel tomatoes, garlic powder, onion powder, salt, and pepper. Stir well until the mixture is smooth and uniform.
- Add chicken and cheese. Fold the cooked shredded chicken and 1 cup of the shredded cheddar cheese into the creamy mixture, mixing thoroughly to combine all ingredients evenly.
- Combine pasta and sauce. Add the drained spaghetti to the bowl and toss gently to coat the pasta completely with the creamy chicken mixture.
- Assemble dish. Transfer the spaghetti mixture into the prepared baking dish, spreading it evenly across the bottom.
- Top with cheeses. Sprinkle the remaining 1 cup cheddar cheese, mozzarella cheese, and grated Parmesan cheese evenly over the top of the assembled spaghetti.
- Bake. Place the baking dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the casserole is heated through, bubbly, and the cheese on top is melted and slightly golden.
- Serve. Remove from the oven and let the casserole cool for 5 minutes to set. Optionally, garnish with chopped fresh parsley before serving.
Notes
- This recipe makes excellent use of leftover rotisserie or cooked chicken.
- For convenience, prepare the casserole a day ahead and refrigerate before baking.
- Enhance flavor by adding a dash of hot sauce or mixing in chopped cooked bacon.
