Description

These Mini Cheesecakes are a delightful bite-size dessert perfect for any occasion. Creamy and indulgent, they are easy to make and can be customized with your favorite toppings.


Ingredients

Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Optional Toppings:

  • fresh berries
  • fruit compote
  • whipped cream
  • chocolate sauce

Instructions

  1. Prepare Crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press mixture into lined muffin pan.
  2. Make Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, and flour.
  3. Fill and Bake: Spoon filling onto crusts and bake for 18–20 minutes. Cool in oven, then chill before serving with toppings.

Notes

  • For a chocolate twist, use crushed chocolate cookies for the crust.
  • Cheesecakes can be made ahead and stored covered in the refrigerator for up to 3 days.
