Description

Mini Reuben Bites are a quick and easy appetizer featuring cocktail rye bread topped with creamy Swiss cheese spread, tangy stone ground mustard, rolled corned beef slices, and sauerkraut. Perfect for parties or casual snacking, these flavorful bites come together in just five minutes without any cooking required.

Ingredients

Scale

Ingredients

  • 8 pieces cocktail rye bread
  • 1 package (8 wedges) The Laughing Cow Original Swiss Cheese Spread
  • 2 teaspoons stone ground mustard
  • 4 slices corned beef
  • 4 teaspoons sauerkraut

Instructions

  1. Spread the cheese: Spread one wedge of The Laughing Cow Original Swiss Cheese Spread on each piece of cocktail rye bread, ensuring even coverage.
  2. Add mustard: Top each piece of bread with about 1/4 teaspoon of stone ground mustard to add a tangy kick.
  3. Prepare corned beef: Roll half a slice of corned beef for each bread piece and place it on top of the mustard layer.
  4. Add sauerkraut: Finish each mini Reuben bite by adding approximately 1/2 teaspoon of sauerkraut on top of the corned beef.

Notes

  • For best flavor, serve immediately to keep the bread from becoming soggy.
  • You can substitute cocktail rye bread with pumpernickel or pumpernickel rye for a different twist.
  • To keep the bites warm, consider briefly warming the corned beef before assembling, but this recipe is designed as a no-cook appetizer.
  • For extra crunch, lightly toast the rye bread before spreading the cheese.
