Chicken Thighs:

  • 8 bone-in, skin-on chicken thighs

Spice Rub:

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Other Ingredients:

  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup chopped dried apricots or golden raisins
  • 1/4 cup chopped fresh cilantro or parsley
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven: Preheat oven to 375°F.
  2. Prepare spice rub: Combine cumin, coriander, paprika, cinnamon, turmeric, ginger, cayenne, salt, and pepper in a bowl.
  3. Season chicken: Pat chicken thighs dry and coat with the spice mixture.
  4. Sear chicken: Sear chicken in olive oil until golden brown. Set aside.
  5. Sauté onions and garlic: Cook onions and garlic until softened.
