Description

For the Crust:

  • 24 chocolate sandwich cookies (like Oreos)
  • 5 tablespoons unsalted butter, melted

For the Mousse:

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/4 cups heavy whipping cream, divided
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping:

  • Whipped cream and chocolate shavings (optional)

Instructions

  1. Prepare the Crust: In a food processor, pulse the chocolate sandwich cookies until finely crushed. Add melted butter and pulse until the mixture resembles wet sand. Press the cookie mixture firmly into the bottom of a parchment-lined 8×8-inch pan to form the crust. Chill in the refrigerator.
  2. Make the Mousse: Heat 3/4 cup heavy cream until hot but not boiling. Pour over chocolate chips, let sit, then stir until smooth. Let cool. Beat cream cheese with powdered sugar and vanilla until smooth. Mix in the cooled chocolate ganache. Whip remaining 1/2 cup heavy cream to stiff peaks. Fold into chocolate mixture.
  3. Assemble: Spread mousse over chilled crust. Refrigerate for at least 4 hours. Slice into bars, top with whipped cream and chocolate shavings.

Notes

  • You can use milk chocolate or dark chocolate chips based on your preference.
  • For a crunchier crust, add a pinch of salt or crushed nuts to the cookie base.
