For the Cookie Bars:
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and grease or line a 9×13-inch baking pan with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Add oats and extras: Stir in the oats, and fold in chocolate chips and nuts if using.
- Bake: Spread the batter evenly in the prepared pan and smooth the top. Bake for 22–25 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
- Cool and slice: Let cool completely in the pan before slicing into bars.
Notes
- You can substitute raisins, white chocolate chips, or dried cranberries for the chocolate chips.
- For softer bars, slightly underbake them and cool completely before cutting.
