Ingredients
Scale
Pancake Batter
- 1 cup rolled oats
- 1 cup milk (dairy or plant-based)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons brown sugar or maple syrup
- 2 large eggs
- 2 tablespoons melted butter or oil
- 1 teaspoon vanilla extract
For Cooking
- Cooking spray or butter for the pan
To Serve
- 1 1/2 cups fresh fruit (such as berries, banana slices, or chopped apples)
- Maple syrup or yogurt (optional)
Instructions
- Soak oats: In a mixing bowl, combine the rolled oats and milk. Let them soak for 10–15 minutes to soften the oats and ensure a tender pancake texture.
- Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt, ensuring even distribution of leavening and spices.
- Combine wet ingredients: To the soaked oat mixture, add the eggs, melted butter or oil, vanilla extract, and brown sugar or maple syrup. Stir thoroughly to blend.
- Add dry mixture: Pour the dry ingredients into the wet oat mixture and gently mix until just combined. Avoid overmixing to keep pancakes light.
- Preheat and grease pan: Heat a nonstick skillet or griddle over medium heat and lightly grease it with cooking spray or butter to prevent sticking.
- Cook pancakes: Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden and cooked through.
- Serve: Serve the pancakes warm topped with fresh fruit and a drizzle of maple syrup or a dollop of yogurt if desired.
Notes
- For extra flavor and texture, fold fresh fruit such as blueberries or diced apples into the batter before cooking.
- The batter can be prepared ahead of time and refrigerated for up to 24 hours to save time on busy mornings.
