Description
A delicious and easy one-pan chicken with buttered noodles recipe that combines tender, seasoned chicken thighs or breasts with savory egg noodles cooked in chicken broth, finished with garlic butter and Parmesan cheese for a comforting meal perfect for weeknights.
Ingredients
Scale
Chicken
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper, to taste
Noodles & Sauce
- 3 cups chicken broth
- 2 cups egg noodles
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the cut chicken pieces with garlic powder, paprika, salt, and pepper. Add chicken to the skillet and cook, stirring occasionally, until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
- Cook the noodles: In the same skillet, bring the chicken broth to a boil. Stir in the egg noodles, then reduce heat to medium. Cover the skillet and let the noodles cook for 8 to 10 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.
- Add garlic butter: Lower the heat and stir in the butter and minced garlic. Cook while stirring until the garlic is fragrant, about 1 to 2 minutes, ensuring the butter melts and blends well with the noodles.
- Combine chicken and noodles: Return the cooked chicken to the skillet and stir gently to combine with the noodles and garlic butter sauce.
- Finish and serve: Sprinkle grated Parmesan cheese and chopped fresh parsley over the top. Serve warm for a comforting and satisfying one-pan meal.
Notes
- You can use either chicken thighs or breasts depending on your preference; thighs tend to be juicier.
- If you prefer a richer flavor, substitute chicken broth with homemade or low-sodium broth.
- For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
- Adding a squeeze of lemon juice before serving can brighten the flavors.
