Description

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups dried green split peas, rinsed
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth or chicken broth
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: diced ham or smoked sausage for extra flavor


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened. Stir in the garlic, carrot, and celery, and cook for another 2–3 minutes.
  2. Add the split peas, broth, bay leaf, and thyme. Bring to a boil, then reduce the heat to low and simmer uncovered for 60–70 minutes, stirring occasionally, until the peas are soft and the soup is thickened.
  3. Remove the bay leaf and season with salt and pepper to taste. For a smoother texture, blend part or all of the soup using an immersion blender. If using ham or sausage, stir it in during the last 10 minutes of cooking to warm through.
  4. Serve hot with crusty bread or crackers.

Notes

  • Leftovers thicken in the fridge—just add a splash of water or broth when reheating.
  • You can also make this soup in a slow cooker on low for 6–8 hours.
