This homemade sweet and spicy spread is easy to prepare on the stovetop and can be canned for long-term storage or refrigerated for immediate use. It’s great served with cream cheese and crackers, as a glaze for roasted vegetables, or alongside grilled meats.

- 4 cups fresh peaches (peeled, pitted, and finely chopped)
- 2–3 jalapeños (seeded and finely chopped)
- 2 tablespoons lemon juice
- 1 package (1.75 oz) fruit pectin
- 5 cups granulated sugar
Instructions
- Combine Ingredients: In a large saucepan, combine the finely chopped peaches, seeded and chopped jalapeños, and lemon juice. Stir in the fruit pectin thoroughly to begin the gelling process.
- Bring to Boil: Place the saucepan over medium-high heat and bring the mixture to a rolling boil, stirring frequently to prevent sticking or burning.
- Add Sugar: Once boiling, add all the granulated sugar at once and stir continuously to dissolve completely in the hot mixture.
- Cook Jam: Return the mix to a full rolling boil and maintain it for 1 to 2 minutes, stirring constantly until the jam thickens slightly, indicating it has reached the right consistency.
- Remove Foam: Take the pan off the heat and skim off any foam from the surface to ensure clarity and an appealing texture.
- Jar the Jam: Carefully ladle the hot jam into sterilized jars leaving a ¼-inch headspace at the top. Wipe the rims clean to ensure a good seal.
- Seal and Process Canning (Optional): Seal the jars with lids and process them in a boiling water bath for 10 minutes if you intend to store them long term. If not, just allow the jars to cool and store in the refrigerator for up to 3 weeks.

- Adjust the spiciness by using more or fewer jalapeños, or include some seeds for extra heat.
