Fresh Peach Dressing:
- 1 ripe peach (peeled, pitted, and chopped)
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey (or maple syrup)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon water (to thin, if needed)
Instructions
- Blend Ingredients: Add the chopped peach, olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to a blender or food processor. Blend until smooth and creamy.
- Adjust Consistency: If the dressing is too thick, add a tablespoon of water and blend again until desired consistency is reached.
- Taste and Serve: Taste and adjust seasoning if needed. Serve immediately or store in an airtight container in the fridge for up to 5 days.
Notes
- For a spicy twist, add a pinch of red pepper flakes or a small piece of jalapeño before blending.
