Description

This Peach Salad Dressing is a delightful and refreshing addition to any salad. Made with fresh peach, olive oil, and a hint of honey, it’s a perfect way to elevate your greens.

Ingredients

Scale

Fresh Peach Dressing:

  • 1 ripe peach (peeled, pitted, and chopped)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon water (to thin, if needed)

Instructions

  1. Blend Ingredients: Add the chopped peach, olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to a blender or food processor. Blend until smooth and creamy.
  2. Adjust Consistency: If the dressing is too thick, add a tablespoon of water and blend again until desired consistency is reached.
  3. Taste and Serve: Taste and adjust seasoning if needed. Serve immediately or store in an airtight container in the fridge for up to 5 days.

Notes

  • For a spicy twist, add a pinch of red pepper flakes or a small piece of jalapeño before blending.
  • This dressing pairs well with spinach, arugula, goat cheese, nuts, or grilled chicken.
