Scale
Main Ingredients
- ½ cup butter, softened
- ¾ cup sugar
- 4 eggs
- 1 (20-oz) can crushed pineapple, undrained
- 1 tsp lemon juice
- ¼ tsp nutmeg
- 3 cups stale white bread, cubed
- 2 Tbsp brown sugar, optional
Instructions
- Preheat Oven: Preheat your oven to 350ºF (175ºC). Lightly spray an 8×8 or 9×9-inch baking pan with cooking spray to prevent sticking, then set it aside.
- Mix Wet Ingredients: In a medium mixing bowl, cream the softened butter and sugar together until smooth and combined. Add the eggs and beat well to blend uniformly.
- Add Pineapple and Seasonings: Carefully stir in the undrained crushed pineapple, then add the lemon juice and nutmeg. Mix gently to combine all flavors.
- Incorporate Bread Cubes: Fold the cubed stale white bread into the pineapple mixture, ensuring the bread is evenly coated but not overly mashed.
- Transfer to Baking Dish: Spoon the pineapple and bread mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle the top with brown sugar for added sweetness and a caramelized crust.
- Bake: Place the dish in the preheated oven and bake uncovered for 45 minutes, or until the casserole is set and the top is golden brown.
Notes
- Using stale bread helps absorb the moisture without becoming too soggy.
- You can substitute white bread with whole wheat or brioche for different textures.
- Brown sugar topping is optional but adds a nice caramelized flavor.
- Allow the casserole to cool slightly before serving for better slicing and portioning.
