Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare the topping: In a small bowl, combine the brown sugar and 2 tablespoons softened butter until crumbly; set aside.
  3. Make the dough: In a large bowl, cream the remaining butter with granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and reserved pineapple juice. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the drained crushed pineapple.
  4. Assemble the cookies: Place about 1 teaspoon of the brown sugar-butter mixture in small mounds on the baking sheets, spacing 2 inches apart. Press a halved maraschino cherry in the center of each mound. Scoop cookie dough over the sugar-cherry base, flattening slightly.
  5. Bake: Bake for 10–12 minutes, or until golden at the edges. Let cookies cool on the sheet for 5 minutes before flipping them over to reveal the pineapple-cherry top. Cool completely on a wire rack.
