Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup finely ground pistachios (plus extra for coating)
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract


Instructions

  1. In a nonstick saucepan over medium heat, combine the sweetened condensed milk, ground pistachios, butter, and salt. Stir continuously until the mixture thickens and pulls away from the sides and bottom of the pan, about 10–12 minutes.
  2. Remove from heat and stir in the vanilla extract.
  3. Let the mixture cool completely at room temperature or refrigerate until firm enough to handle.
  4. Grease your hands lightly with butter and roll small portions into 1-inch balls.
  5. Roll each brigadeiro in additional ground pistachios to coat.
  6. Place in mini paper cups and serve or refrigerate until ready to enjoy.

  • For a smoother texture, use pistachio flour or pulse shelled pistachios in a food processor until very fine.
