Instructions
- Prepare the Sirloin: Slice the top sirloin thinly and pound each slice until it is about ⅛ inch thick to create a tender and workable base for layering.
- Assemble the Base Layer: Lay out a base layer of the pounded sirloin approximately 2.5 feet long and 1 foot wide on a clean surface. Spread a generous base layer of pizza sauce evenly over the steak.
- Layer the Toppings: Add sliced mozzarella over the sauce, then place a layer of pepperoni. Sprinkle chopped parsley and minced garlic evenly across the top for added flavor.
- Add More Layers: Add a thin layer of spicy ground sausage, followed by another layer of pepperoni, mozzarella, pizza sauce, and finally top with more thinly sliced steak. Wrap the entire layered assembly tightly in foil.
- Freeze the Assembly: Place the wrapped assembly on a tray and freeze for at least 1 hour, ideally 4 hours, until the layers are solid for easier slicing.
- Preheat the Grill: Preheat your grill or fire to medium heat, aiming for about 325°F to ensure even cooking.
- Cut and Skewer: Remove the frozen meat assembly and slice into 2×2 inch cubes. Thread the meat cubes onto small skewers. Season the outside of the skewers with SPG or your preferred beef rub for extra flavor.
- Grill the Skewers: Place the skewers on the grill grates and cook slowly to render the fat and sausage. Grill for approximately 8-10 minutes per side until the internal temperature of sausage reaches 165°F. Remove from grill and let rest briefly.
- Serve: Serve the hot skewers with crispy fries and accompany them with pizza sauce or garlic sauce for dipping.
