Instructions
- In a large saucepan, combine butter, milk, granulated sugar, brown sugar, pumpkin purée, pumpkin pie spice, and salt. Bring the mixture to a gentle boil over medium heat, stirring frequently. Boil for 1–2 minutes, then remove from heat. Stir in the vanilla extract, then add oats and mix until well combined.
- Drop spoonfuls of the mixture onto wax paper or a parchment-lined baking sheet. Flatten slightly with the back of the spoon. Let the cookies set at room temperature for about 30 minutes, or refrigerate for quicker setting.
