Pumpkin Spice Oatmeal is a warm, cozy breakfast bowl that tastes like fall in every bite. With creamy oats, real pumpkin, and the perfect blend of spices, it’s a nutritious and comforting way to start your day—ready in just 10 minutes.

Ingredients

Scale

Main Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 cups milk or water (or a mix)
  • ½ cup canned pumpkin puree
  • 12 tablespoons maple syrup or brown sugar
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Optional Toppings

  • Chopped pecans or walnuts
  • Dried cranberries or raisins
  • Milk or cream for serving

Instructions

  1. Heat Liquid: In a medium saucepan over medium heat, bring milk (or water) to a simmer.
  2. Add Ingredients: Stir in oats, pumpkin puree, pumpkin pie spice, cinnamon, salt, and maple syrup or brown sugar.
  3. Cook Oatmeal: Cook for 5–7 minutes, stirring occasionally, until the oats are tender and the mixture is creamy.
  4. Finish and Serve: Remove from heat and stir in vanilla. Divide into bowls and top with nuts, dried fruit, and a splash of milk or cream if desired. Serve warm.

Notes

  • For extra protein, stir in a spoonful of nut butter or a scoop of protein powder after cooking.
  • Steel-cut oats can be used, but will require longer cooking time and additional liquid.
