Ingredients

Scale

Main Ingredients:

  • 1 cup red lentils (rinsed well)
  • 1 tablespoon coconut oil or olive oil
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger

Spices:

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Liquid & Garnish:

  • 3 cups water or vegetable broth
  • 1 (14 oz) can full-fat coconut milk
  • juice of 1/2 lemon
  • chopped cilantro (for garnish)

Instructions

  1. Heat the oil: In a large saucepan, heat the oil over medium heat.
  2. Cook aromatics: Add onion, cook until softened. Stir in garlic and ginger until fragrant.
  3. Add spices: Stir in turmeric, cumin, coriander, chili powder, salt, and pepper.
  4. Cook lentils: Add rinsed lentils and water/broth, simmer covered for 15–20 minutes.
  5. Finish: Stir in coconut milk, simmer uncovered for 5 minutes. Add lemon juice, adjust seasoning, and serve hot garnished with cilantro.
