These Red, White, and Blue Taco Bites are perfect for any patriotic celebration. With colorful toppings on crisp tortilla chips, they are a festive and delicious appetizer that will impress your guests.

			Taco Meat:
- 24 scoop-shaped tortilla chips
 - 1/2 pound ground beef
 - 1 tablespoon taco seasoning
 - 1/3 cup water
 
Toppings:
- 1/2 cup sour cream
 - 1/2 cup finely diced red bell pepper
 - 1/2 cup fresh blueberries
 - 1/4 cup shredded cheddar cheese
 - 1/4 cup fresh cilantro chopped (optional)
 
Instructions
- Cook the Taco Meat: In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess grease if needed. Stir in taco seasoning and water, simmering for 2–3 minutes until thickened. Remove from heat.
 - Assemble the Taco Bites: Arrange tortilla scoop chips on a serving platter. Fill each with a spoonful of taco meat, then top with a small dollop of sour cream. Sprinkle with diced red bell pepper and a few blueberries for the “red” and “blue” colors. Top with shredded cheddar cheese and cilantro if desired. Serve immediately.
 
Notes
- For a vegetarian version, replace the ground beef with seasoned black beans.
 - You can also use guacamole in place of sour cream for a fresh twist.
 - Best assembled right before serving so the chips stay crisp.
