Ingredients
Scale
Vegetables
- 3 medium beets, peeled and cut into wedges
- 4 large carrots, peeled and sliced diagonally
Seasoning & Dressing
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme or fresh thyme leaves
Cheese & Garnish
- 8 ounces burrata cheese
- Fresh basil or microgreens for garnish (optional)
- Extra balsamic glaze for drizzling (optional)
Instructions
- Preheat oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Prepare vegetables: In a large bowl, combine the peeled and cut beets and carrots. Add olive oil, balsamic vinegar, honey, salt, black pepper, and thyme. Toss well until the vegetables are evenly coated with the dressing and seasoning.
- Roast vegetables: Spread the seasoned beets and carrots in a single layer on the prepared baking sheet to ensure even roasting. Place in the oven and roast for 35 to 40 minutes, flipping the vegetables halfway through for uniform caramelization and tenderness.
- Cool slightly: Once roasted, remove the vegetables from the oven and allow them to cool for a few minutes so they are warm but not hot when served.
- Assemble the dish: Transfer the roasted beets and carrots to a serving platter. Tear the burrata cheese over the warm vegetables, letting the creamy center spread naturally over the roasted vegetables.
- Garnish and serve: Add fresh basil or microgreens on top for a burst of color and freshness. Optionally, drizzle extra balsamic glaze for enhanced flavor before serving.
Notes
- For added crunch, sprinkle the dish with toasted nuts or seeds such as walnuts, pecans, or pumpkin seeds.
