Instructions

  1. Heat olive oil: In a large pot or Dutch oven over medium heat, heat olive oil.
  2. Cook sausage: Add Italian sausage and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  3. Add onion and garlic: Add chopped onion and cook until softened. Stir in garlic, Italian seasoning, and red pepper flakes; cook until fragrant.
  4. Add broth and tomatoes: Pour in chicken broth and diced tomatoes with juices. Bring to a boil, then reduce heat.
  5. Stir in cream and tortellini: Add heavy cream and tortellini, simmer until pasta is tender.
