Instructions
- Prepare the dressing: In a small bowl, whisk together 2 tablespoons olive oil, chopped capers, finely chopped basil, orange zest, fresh orange juice, Dijon mustard, honey, salt, and black pepper until well combined. Set aside to allow flavors to meld.
 - Heat the skillet: Place a skillet over medium-high heat and add a light coating of olive oil. Allow the pan to get hot for a minute to ensure a good sear.
 - Season and sear scallops: Lightly season the scallops with salt and black pepper on both sides. Carefully place them in the hot skillet without crowding. Cook undisturbed for 2 to 3 minutes per side until a golden-brown crust forms and the center is just opaque. Avoid moving them for an even sear.
 - Assemble and serve: Remove scallops from the skillet and arrange them on a serving plate. Spoon the prepared orange, basil, and caper dressing over the scallops evenly. Serve immediately, optionally on a bed of fresh microgreens or arugula for added color and freshness.
