Instructions

  1. Prepare the dressing: In a small bowl, whisk together 2 tablespoons olive oil, chopped capers, finely chopped basil, orange zest, fresh orange juice, Dijon mustard, honey, salt, and black pepper until well combined. Set aside to allow flavors to meld.
  2. Heat the skillet: Place a skillet over medium-high heat and add a light coating of olive oil. Allow the pan to get hot for a minute to ensure a good sear.
  3. Season and sear scallops: Lightly season the scallops with salt and black pepper on both sides. Carefully place them in the hot skillet without crowding. Cook undisturbed for 2 to 3 minutes per side until a golden-brown crust forms and the center is just opaque. Avoid moving them for an even sear.
  4. Assemble and serve: Remove scallops from the skillet and arrange them on a serving plate. Spoon the prepared orange, basil, and caper dressing over the scallops evenly. Serve immediately, optionally on a bed of fresh microgreens or arugula for added color and freshness.
