Prawn Mixture:
- 10 oz raw shrimp or prawns, peeled and deveined
- 2 green onions, chopped

- 1 tablespoon soy sauce

- 1 large egg white
- 1 tablespoon cornstarch
- Salt and pepper to taste
Additional Ingredients:
- 6 slider buns or mini brioche rolls, halved
- 3 tablespoons sesame seeds (white or a mix of black and white)
- 2 tablespoons vegetable oil (for pan-frying)
- Optional toppings: sliced cucumber, pickled carrots, sriracha mayo, fresh cilantro
Instructions
- Prepare the Prawn Mixture: In a food processor, combine shrimp, green onions, garlic, ginger, soy sauce, sesame oil, egg white, cornstarch, salt, and pepper. Pulse until a coarse paste forms.
- Assemble the Sliders: Spread the shrimp mixture onto the cut side of each bottom slider bun half. Press sesame seeds onto the shrimp mixture.
- Cook the Sliders: Heat oil in a skillet, place sliders shrimp side down, and cook until golden. Flip and toast the bun side until warmed through.
- Assemble and Serve: Top each prawn toast with optional toppings, then cover with the top bun. Serve warm.

- For extra crunch, serve on toasted slider buns and finish with a quick broil.
- You can prep the prawn mixture a day in advance and refrigerate until ready to cook.
