Instructions

  1. Prepare the Egg Mixture: In a bowl, whisk the eggs with milk, salt, and white pepper until well combined to create a smooth uniform mixture.
  2. Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes until they turn pink and are just cooked through. Remove the shrimp from the pan and set aside to prevent overcooking.
  3. Scramble the Eggs: Add the remaining 1 tablespoon of vegetable oil to the pan, then pour in the egg mixture. Allow it to sit for a few seconds, then gently stir to scramble. Cook just until the eggs are set but still soft and tender.
  4. Combine Ingredients: Add the cooked shrimp back into the pan along with minced garlic, chopped green onions, and sesame oil. Stir everything together for about 30 seconds until well combined and heated through.
  5. Serve: Immediately serve the shrimp and egg stir-fry hot over cooked jasmine rice for a delicious and satisfying meal.

Notes

  • Don’t overcook the shrimp; remove them from the pan as soon as they turn pink to keep them tender and juicy.
