Shrimp Salad

- 1 tablespoon chopped fresh dill or parsley
- 1/4 cup finely chopped celery
- 1 tablespoon finely chopped red onion (optional)

Buns and Serving
- 4 brioche hot dog buns
- 1 tablespoon butter, softened
- Lemon wedges for serving
Instructions
- Prepare the shrimp salad: In a medium bowl, combine the chopped shrimp, mayonnaise, lemon juice, Dijon mustard, Old Bay seasoning (if using), fresh dill or parsley, celery, and red onion. Mix until all ingredients are evenly coated and well combined. Season the mixture with salt and black pepper to your taste. Cover the bowl and refrigerate the shrimp salad for at least 15 minutes to allow the flavors to meld.
- Toast the brioche buns: While the shrimp salad chills, lightly butter the insides of the brioche buns. Heat a skillet over medium heat and place the buns butter-side down in the pan. Toast them until they are golden brown and crisp, approximately 2 to 3 minutes. Remove from heat and keep warm.
- Assemble the shrimp rolls: Generously fill each toasted brioche bun with the chilled shrimp salad mixture. Serve immediately, optionally garnished with extra fresh herbs or a squeeze of lemon juice for added brightness.

- For a lighter version, substitute Greek yogurt for half the mayonnaise.
