Description

Shrimp Scampi Pasta Bake is a delightful Italian-American casserole combining tender shrimp, garlic-infused butter sauce, and melted cheeses over perfectly cooked pasta. This comforting dish offers a refreshing lemony twist and is perfect for a hearty family dinner or special occasion.

Ingredients

Scale

Pasta and Seafood

  • 12 oz penne or linguine pasta
  • 1 pound large shrimp, peeled and deveined

Sauce and Seasonings

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine (or chicken broth)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Cheeses and Garnish

  • 1½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Chopped parsley, for garnish

Instructions

  1. Preheat and Cook Pasta: Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the pasta until just al dente, about 9-11 minutes, then drain and set aside.
  2. Sauté Garlic and Shrimp: In a large skillet, melt the butter with olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant. Add the shrimp and cook for 2 to 3 minutes per side until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.
  3. Make the Sauce: Deglaze the skillet by pouring in the white wine, stirring to scrape up any browned bits from the bottom. Allow it to simmer for 2 minutes to reduce slightly. Stir in lemon juice, lemon zest, Italian seasoning, salt, and pepper to taste.
  4. Combine Pasta and Shrimp: Add the cooked pasta and shrimp back into the skillet with the sauce and toss well to evenly coat the ingredients.
  5. Assemble and Bake: Transfer the shrimp and pasta mixture into a greased 9×13-inch baking dish. Evenly sprinkle shredded mozzarella and grated Parmesan cheese over the top. Bake in the preheated oven for 15 to 20 minutes, until the cheese is melted, bubbly, and lightly golden.
  6. Garnish and Serve: Remove from oven, garnish with freshly chopped parsley, and serve hot for a comforting and flavorful meal.

Notes

  • Use pre-cooked shrimp to save time; reduce skillet cooking time as shrimp only need to be warmed through.
  • Swap mozzarella with fontina or provolone cheese for a creamier texture and different flavor profile.
  • For a spicier dish, increase red pepper flakes according to taste.
  • Dry white wine can be substituted with chicken broth if preferred.
