Instructions
- Prepare the Banana Mixture: In a large bowl, combine the mashed bananas, granulated sugar, egg, milk, and vanilla extract. Whisk or stir these ingredients together until fully incorporated and smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and nutmeg to evenly distribute the leavening agents and spices.
- Combine Wet and Dry: Gradually add the dry ingredients into the banana mixture, stirring gently until a thick batter forms. Make sure there are no large lumps, but do not overmix.
- Heat the Oil: Pour vegetable oil into a large skillet to about 1/4 inch depth and heat over medium heat until it is hot but not smoking. You can test by dropping a small amount of batter in; it should sizzle immediately.
- Fry the Fritters: Using a spoon, drop spoonfuls of batter into the hot oil and flatten slightly with the back of the spoon. Fry the fritters for 2–3 minutes on each side until they turn golden brown and are cooked through inside.
- Drain Excess Oil: Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Serve and Garnish: Serve the banana fritters warm, dusted with powdered sugar or drizzled with honey as desired for extra sweetness and flavor.
