Description

Sloppy Joe Soup is a hearty and flavorful twist on the classic sloppy joe sandwich, transformed into a comforting soup packed with ground beef, beans, corn, and tangy Manwich sauce. Perfect for a quick weeknight meal, this soup is easy to prepare and serves a crowd.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 Tbsp dried minced onion flakes
  • 1 (1.31-oz) packet sloppy joe seasoning mix
  • 1 (32-oz) box low-sodium beef broth
  • 1 (15.5-oz) can kidney beans, drained and rinsed
  • 1 (15-oz) can corn kernels, drained
  • 1 (15-oz) can Manwich sloppy joe sauce
  • 1 (14.5-oz) can petite diced tomatoes, undrained
  • 1 tsp chili powder
  • 1 tsp hot sauce
  • Salt and pepper, to taste

Instructions

  1. Brown the beef: In a large Dutch oven, heat over medium-high heat and cook the ground beef until it is no longer pink, breaking it up as it cooks. Drain any excess grease to keep the soup from being too oily.
  2. Add remaining ingredients: To the same pot with the browned beef, add the dried minced onion flakes, sloppy joe seasoning mix, beef broth, kidney beans, corn, Manwich sloppy joe sauce, petite diced tomatoes (with juice), chili powder, hot sauce, salt, and pepper.
  3. Simmer the soup: Bring the mixture to a boil, then reduce the heat to medium and let it simmer gently for 20 minutes. This allows the flavors to meld together and the soup to thicken slightly.

Notes

  • Use lean ground beef to reduce fat content.
  • If you prefer a spicier soup, increase the hot sauce or add some cayenne pepper.
  • The soup can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a thicker consistency, simmer a bit longer or add a small slurry of cornstarch and water during simmering.
  • Serve with crusty bread or over rice for a more filling meal.
