Description

A hearty and comforting Slow Cooker Beef Stew made with tender beef cubes, fresh vegetables, and aromatic herbs, perfect for an easy and flavorful meal.

Ingredients

Scale

Meat

  • 1 lb beef stew meat, cut into cubes

Vegetables

  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced

Liquids and Seasonings

  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Gather and prepare all ingredients by cutting the beef stew meat into cubes, peeling and slicing carrots, peeling and dicing potatoes, chopping the onion, and mincing the garlic cloves.
  2. Combine in Slow Cooker: Place the beef stew meat, carrots, potatoes, chopped onion, and minced garlic into the slow cooker pot.
  3. Add Liquids and Seasonings: Pour in the 4 cups of beef broth and add 1 tablespoon Worcestershire sauce. Sprinkle in 1 teaspoon dried thyme, 1 teaspoon dried rosemary, salt, and pepper to your taste.
  4. Mix Thoroughly: Stir all ingredients gently to combine everything evenly within the slow cooker.
  5. Cook: Cover the slow cooker with its lid and set it to cook. Use the low setting to cook for 7-8 hours or the high setting for 4-5 hours, until the beef is tender and the vegetables are fully cooked and soft.
  6. Season and Serve: Before serving, taste the stew and adjust the seasoning with additional salt and pepper if needed. Then serve hot for a comforting meal.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew about 30 minutes before serving, then cook until thickened.
  • You can add other vegetables such as peas or green beans during the last hour of cooking for additional flavor and nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
  • To enhance flavor, sear the beef cubes in a hot pan before adding to the slow cooker, though this step is optional.
