Chicken Fajitas:
- 1½ pounds boneless, skinless chicken breasts
- 3 bell peppers (any colors, sliced)
- 1 large onion (sliced)
- 1 can (14.5 oz) diced tomatoes (drained)
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1½ teaspoons cumin
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- juice of 1 lime
- chopped cilantro and tortillas for serving
Instructions
- Prepare Vegetables: Place the sliced bell peppers and onions in the bottom of a 6-quart slow cooker.
- Add Chicken: Lay the chicken breasts on top of the vegetables.
- Season: In a small bowl, mix olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Pour over the chicken and vegetables.
- Add Tomatoes: Add the drained diced tomatoes to the slow cooker.
- Cook: Cover and cook on low for 5–6 hours or high for 2½–3 hours until chicken is tender.
- Shred Chicken: Remove chicken, shred with forks, then return to slow cooker and stir.
- Finish: Squeeze lime juice over mixture. Serve hot with tortillas and desired toppings.
Notes
- For a low-carb option, serve in lettuce wraps or over cauliflower rice.
- Leftovers are great for meal prep or for making quesadillas or rice bowls.
