Description

These Slow Cooker Chicken Fajitas are a delicious and easy meal to prepare. Tender chicken, colorful bell peppers, and onions slow-cooked to perfection with flavorful Mexican spices. Serve with tortillas and your favorite toppings for a satisfying dinner.

Chicken Fajitas:

  • pounds boneless, skinless chicken breasts
  • 3 bell peppers (any colors, sliced)
  • 1 large onion (sliced)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1½ teaspoons cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • juice of 1 lime
  • chopped cilantro and tortillas for serving


Instructions

  1. Prepare Vegetables: Place the sliced bell peppers and onions in the bottom of a 6-quart slow cooker.
  2. Add Chicken: Lay the chicken breasts on top of the vegetables.
  3. Season: In a small bowl, mix olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Pour over the chicken and vegetables.
  4. Add Tomatoes: Add the drained diced tomatoes to the slow cooker.
  5. Cook: Cover and cook on low for 5–6 hours or high for 2½–3 hours until chicken is tender.
  6. Shred Chicken: Remove chicken, shred with forks, then return to slow cooker and stir.
  7. Finish: Squeeze lime juice over mixture. Serve hot with tortillas and desired toppings.

Notes

  • For a low-carb option, serve in lettuce wraps or over cauliflower rice.
