Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Sauce
- 1 can (10.5 oz) cream of chicken soup
- 3/4 cup sour cream
- 1/2 cup low-sodium chicken broth
Stuffing and Vegetables
- 1 box (6 oz) stuffing mix (such as Stove Top)
- 2 cups frozen mixed vegetables (optional)
Instructions
- Prepare the Slow Cooker: Spray the inside of the slow cooker with nonstick cooking spray to prevent sticking and make cleanup easy.
- Season the Chicken: Season the chicken breasts evenly with salt, black pepper, garlic powder, and onion powder, then place them in the bottom of the slow cooker.
- Make the Sauce: In a medium bowl, thoroughly mix the cream of chicken soup, sour cream, and low-sodium chicken broth until you achieve a smooth consistency.
- Layer the Sauce and Stuffing: Spread the creamy sauce mixture evenly over the seasoned chicken breasts in the slow cooker. Then sprinkle the dry stuffing mix evenly on top of the sauce layer.
- Add Vegetables (Optional): If using, add frozen mixed vegetables on top of or around the stuffing layer for added nutrition and color.
- Cook: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through and the stuffing has absorbed the flavorful liquid.
- Finish and Serve: Before serving, fluff the stuffing with a fork to separate it. Serve the chicken and stuffing warm alongside your favorite side dishes.
Notes
- For extra flavor, use herbed stuffing mix or add a handful of shredded cheese during the last 30 minutes of cooking.
- This dish pairs well with a fresh side salad or steamed green beans to balance the creamy richness.
- Using low-sodium chicken broth helps control the overall salt content.
- If you prefer, you can swap the sour cream for Greek yogurt for a slightly tangier taste and added protein.
