Chicken and Seasonings:
- 4 boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
Sauce:
- 1 can (10.5 oz) cream of chicken soup
- 3/4 cup sour cream
- 1/3 cup low-sodium chicken broth
Other:
- 1 box (6 oz) stuffing mix (such as Stove Top)
- Salt and pepper to taste
- 2 cups frozen mixed vegetables (optional)
- Chopped parsley for garnish (optional)
Instructions
- Prepare Slow Cooker: Spray the inside of the slow cooker with nonstick cooking spray.
- Season Chicken: Place chicken breasts in the slow cooker and season with salt, pepper, garlic powder, onion powder, and thyme.
- Make Sauce: In a medium bowl, mix cream of chicken soup, sour cream, and chicken broth until smooth. Spread over the chicken.
- Add Stuffing: Sprinkle dry stuffing mix over the chicken. Add frozen vegetables if desired.
- Cook: Cover and cook on low for 4–5 hours or on high for 2.5–3 hours until chicken is cooked through and stuffing is moist.
- Finish: Fluff stuffing with a fork before serving. Garnish with parsley if desired.
Notes
- For extra flavor, use cream of mushroom or celery soup.
- Add shredded cheese on top during the last 30 minutes for a cheesy twist.
- Leftovers store well in the fridge for up to 3 days.
