- 3 cups russet potatoes, peeled and thinly sliced

Soup Mixture
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Toppings and Garnish
- 1 1/2 cups shredded cheddar cheese
- Chopped parsley (optional, for garnish)
Instructions
- Brown the Beef and Onion: In a skillet over medium heat, cook the ground beef with the chopped onion until fully browned and no longer pink. Drain any excess grease to avoid a greasy casserole.
- Prepare the Soup Mixture: In a small bowl, combine the cream of mushroom soup, milk, garlic powder, salt, and black pepper, mixing well until smooth and evenly blended.
- Layer Ingredients in Slow Cooker: Grease the inside of your slow cooker to prevent sticking. Layer half of the sliced potatoes and carrots evenly on the bottom. Spoon half of the cooked beef and onion mixture over the vegetables, then drizzle with half of the soup mixture. Repeat these layers once more.
- Cook the Casserole: Cover the slow cooker, and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the potatoes and carrots are tender and the flavors have melded beautifully.
- Add Cheese and Melt: About 15 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover again and allow the cheese to melt fully.
- Garnish and Serve: If desired, sprinkle chopped parsley over the cheese for a fresh pop of color and flavor. Serve the casserole hot for a comforting meal.
