 - 2 tablespoons granulated sugar
 - 1 teaspoon ground cinnamon
 - 3 tablespoons unsalted butter, melted
 
For the filling:
- 8 oz cream cheese, softened
 - 1/4 cup granulated sugar
 - 1 tablespoon all-purpose flour
 - 1 large egg
 - 1 teaspoon vanilla extract
 - 1/2 teaspoon ground cinnamon
 
For the topping:
- 2 tablespoons granulated sugar
 - 1/2 teaspoon ground cinnamon
 
Instructions
- Preheat the oven: Preheat the oven to 325°F and line a mini muffin tin with 12 paper liners.
 - Prepare the crust: Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press mixture into each liner to form the crust. Bake for 5 minutes.
 - Make the filling: Beat cream cheese until smooth. Add sugar, flour, egg, vanilla, and cinnamon. Spoon filling over the crust.
 - Bake: Bake for 14 to 16 minutes until set. Cool, then chill for at least 2 hours.
 - Add topping: Mix cinnamon and sugar, sprinkle over each bite before serving.
