Vegan Cheese Sauce

  • 1 cup peeled and diced potatoes

  • 1/4 cup nutritional yeast
  • 1/4 cup unsweetened non-dairy milk
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika


Instructions

  1. Activate Yeast: In a large bowl, combine the warm water, active dry yeast, and brown sugar. Let it sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Prepare Dough: Add salt, all-purpose flour, and olive oil to the yeast mixture. Stir until a shaggy dough forms. Transfer to a floured surface and knead for 5–7 minutes until the dough is smooth and elastic.
  3. First Rise: Place the dough in a greased bowl and cover it with a clean cloth. Let it rise in a warm place for about 1 hour or until it doubles in size.
  4. Preheat Oven and Prepare Boiling Water: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Bring a large pot of water to a boil and carefully stir in the baking soda, which will cause bubbling.
  5. Shape Pretzel Bites: Punch down the risen dough and divide it into 6 equal portions. Roll each portion into a rope and cut each rope into 1-inch bite-sized pieces.
