Ingredients
Scale
Bread and Spread
- 4 slices sourdough or thick-cut bread
- 1 tablespoon mayonnaise
- 1 tablespoon butter, softened
Cheeses and Fillings
- 4 slices sharp cheddar cheese
- 2 slices pepper jack cheese
- 2 teaspoons ghost pepper hot sauce or finely minced ghost pepper (use with extreme caution)
- 2 tablespoons pickled jalapeños, sliced
- Optional: crispy bacon or caramelized onions for extra texture
Instructions
- Prepare the Bread: Spread a thin layer of mayonnaise on one side of each bread slice. This will help create a golden, crispy crust when grilling.
- Assemble the Sandwich: On the non-mayo side of two bread slices, layer the sharp cheddar cheese and pepper jack cheese evenly. Add the pickled jalapeños over the cheese and drizzle with ghost pepper hot sauce or sprinkle minced ghost pepper carefully. Add optional crispy bacon or caramelized onions if desired.
- Top and Press: Place the remaining two slices of bread on top of the fillings with the mayonnaise side facing outward to ensure even crisping of the crusts.
- Heat the Skillet: Warm a skillet over medium-low heat and add half of the softened butter, spreading it to coat the surface.
- Grill the Sandwich: Place one sandwich in the skillet and cook for 3 to 4 minutes on each side, pressing gently with a spatula until the bread is golden brown and the cheese is melted thoroughly.
- Repeat: Add more butter to the skillet as needed and repeat the grilling process for the second sandwich.
- Rest and Serve: Remove the sandwiches from the skillet and let them cool slightly for a minute before slicing. Be cautious as the interior will be very hot and spicy.
Notes
- Ghost peppers are extremely spicy; handle with gloves and use sparingly.
- For a milder heat, substitute ghost peppers with habanero or chipotle sauce.
- Serving with ranch dressing or a glass of milk helps tame the intense heat.
