Ingredients
Scale
Shrimp and Marinade
- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Vegetables
- 1 cup bell peppers (thinly sliced)
- ½ cup red onion (thinly sliced)
- 1 small zucchini (sliced)
- 2 ears of corn (cut into small rounds or kernels removed)
Garnish
- 1 tablespoon chopped fresh parsley or cilantro
Instructions
- Preheat the cooking surface: Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat to ensure perfect cooking temperature for the shrimp packets.
- Prepare the shrimp marinade: In a large bowl, combine the shrimp with olive oil, lemon juice, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Toss thoroughly to coat each shrimp evenly with the flavorful seasoning blend.
- Assemble the foil packets: Tear four large sheets of aluminum foil, approximately 12×18 inches each. Evenly divide the sliced bell peppers, red onion, zucchini, and corn among the foil sheets. Place the seasoned shrimp on top of the vegetables.
- Seal the packets: Fold each foil sheet into a packet by bringing the long sides together and sealing tightly, then fold in the short ends to prevent any juices from escaping during cooking.
- Cook the shrimp packets: Place the foil packets on a baking sheet if using the oven or directly on the grill grates. Cook for 12 to 15 minutes until the shrimp turn pink and are fully cooked through.
- Serve and garnish: Carefully open the packets, watching out for hot steam. Sprinkle with fresh chopped parsley or cilantro. Serve the shrimp and vegetables straight from the foil packets or over a bed of rice or quinoa for a satisfying meal.
Notes
- Add pineapple chunks or a drizzle of hot honey for a delightful sweet-spicy twist.
