Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Firmly press this mixture into the bottom of a 9-inch springform pan to form an even crust layer. Bake the crust for 10 minutes, then remove from oven and allow it to cool completely.
  2. Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and free of lumps. Add the granulated sugar and blend until combined. Incorporate the eggs one at a time, ensuring each is fully mixed before adding the next. Then add vanilla extract and cherry liqueur, mixing well. Finally, fold in the sour cream until the filling is smooth and creamy.
  3. Assemble and Bake: Pour the prepared filling over the cooled crust, spreading it evenly. Place the cheesecake in the oven and bake for 50 to 60 minutes, or until the center is set but retains a slight jiggle when gently shaken. Once done, turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking.
