Description

These Spinach & Feta Pastry Rolls are a delicious savory treat perfect for any occasion. Puff pastry filled with a flavorful spinach and feta mixture, baked until golden and crispy.

Puff Pastry:

  • 1 sheet puff pastry, thawed

Spinach Filling:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 3 cups fresh spinach, roughly chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese

Additional:

  • 1 egg, beaten (for sealing and brushing)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the Spinach Filling: In a skillet, heat olive oil over medium heat. Add garlic and sauté. Add spinach, oregano, salt, and pepper. Cook until wilted. Remove from heat and cool slightly. Stir in feta cheese.
  3. Assemble the Rolls: Roll out puff pastry, spread spinach mixture, leaving a border. Roll up tightly, slice into pieces. Place on baking sheet.
  4. Bake: Brush tops with egg, sprinkle with seeds. Bake for 18-22 minutes until golden brown.
