Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 350°F and line a 12-cup muffin tin with paper liners or lightly grease.
- Mix dry ingredients: In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, and cinnamon.
- Combine wet ingredients: In a separate bowl, mix mashed bananas, oil, egg, and vanilla extract until smooth.
- Combine wet and dry ingredients: Pour wet ingredients into dry and stir gently until just combined. Fold in chopped strawberries.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
- Cool and serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For added crunch, sprinkle coarse sugar on top before baking.
