Strawberry Filling

  • 3/4 cup strawberry preserves or jam
  • 1 cup fresh strawberries, diced
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper to prevent sticking and ensure easy removal of bars.
  2. Mix Crust and Topping: In a medium bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Pour in the melted butter and stir until the mixture becomes crumbly but can hold together when pressed. Set aside 3/4 cup of this mixture for the topping later.
  3. Form the Crust: Press the remaining oat mixture firmly into the bottom of the prepared baking dish to create an even crust layer that will support the filling.
  4. Prepare the Strawberry Filling: In a separate bowl, mix together the strawberry preserves, diced fresh strawberries, cornstarch, and lemon juice until well combined. This filling will thicken as it bakes and give a fresh fruity flavor.
