- 1/3 Cup Fresh Cilantro
Seasoning & Dressing
- 3 Tbsp Lime Juice
- 1/4 Tsp Sea Salt
Instructions
- Prepare the Pineapple and Strawberries: Remove the stem and skin from the pineapple and chop the inner fruit into small, tidbit-sized pieces. Hull the strawberries by removing their stems and chop them into similarly sized chunks.
- Chop the Cherry Tomatoes: Cut the cherry tomatoes into pieces matching the size of the chopped strawberries to keep a consistent texture throughout the salsa.
- Prepare the Jalapeno and Onion: Remove the ribs and seeds from the jalapeno for less heat, then finely dice it. Adjust the amount according to your spice preference. Finely dice the red onion as well.
- Chop the Cilantro: Roughly chop the fresh cilantro leaves to add to the salsa, giving it a bright herbal note.
- Combine Ingredients: In a large bowl, combine all the chopped fruits and vegetables. Sprinkle with the lime juice and sea salt.
- Mix and Serve: Gently stir all ingredients together to evenly distribute flavors. Enjoy immediately or let it chill in the refrigerator for a more melded taste.
