Description

Fresh and vibrant Strawberry Poppyseed Dressing that combines juicy strawberries with tangy apple cider vinegar and a hint of honey, emulsified with olive oil and dotted with crunchy poppy seeds. Perfect for drizzling on summer salads or as a fruity vinaigrette for a refreshing twist.

Ingredients

Scale

Dressing Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ cup olive oil or neutral oil
  • 1 tablespoon poppy seeds

Instructions

  1. Combine Ingredients: In a blender or food processor, add the fresh strawberries, apple cider vinegar, honey or maple syrup, Dijon mustard, and salt. Blend these ingredients together until the mixture is completely smooth.
  2. Emulsify the Dressing: While the blender is running on low speed, slowly drizzle in the olive oil or neutral oil. Continue blending until the dressing becomes emulsified and creamy in texture.
  3. Add Poppy Seeds: Remove the dressing from the blender and stir in the poppy seeds by hand to preserve their texture and crunch.
  4. Taste and Adjust: Taste the dressing and adjust the sweetness or acidity to your preference by adding more honey, vinegar, or salt if needed.
  5. Store and Serve: Transfer the finished dressing to a jar or container and refrigerate until ready to use. Shake well before serving to recombine the ingredients.

Notes

  • This dressing keeps well in the fridge for up to 5 days.
  • Use fresh, ripe strawberries for the best flavor and natural sweetness.
  • For a creamier version, blend in 1 to 2 tablespoons of plain Greek yogurt.
