  • 1 (20 oz) package refrigerated cheese tortellini

Sauce and Toppings:

  • 1 tablespoon olive oil
  • 1/2 pound Italian sausage, casings removed
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup sliced black olives
  • 1/2 cup sliced pepperoni, halved
  • 2 cloves garlic, minced
  • 1 (24 oz) jar marinara or pizza sauce
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the tortellini: Cook the tortellini according to package directions, drain, and set aside.
  3. Sauté the ingredients: In a large skillet, heat olive oil, add sausage, onion, bell pepper, and garlic. Sauté until softened. Add olives and pepperoni.
  4. Combine and simmer: Add marinara sauce and Italian seasoning to the skillet. Simmer for a few minutes. Toss in cooked tortellini.
  5. Assemble and bake: Transfer the mixture to a baking dish. Top with cheeses. Bake for 20–25 minutes until bubbly and golden.
