Cheese Tortellini:
- 1 (20 oz) package refrigerated cheese tortellini
Sauce and Toppings:
- 1 tablespoon olive oil
- 1/2 pound Italian sausage, casings removed
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup sliced black olives
- 1/2 cup sliced pepperoni, halved
- 2 cloves garlic, minced
- 1 (24 oz) jar marinara or pizza sauce
- 1 teaspoon Italian seasoning
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the tortellini: Cook the tortellini according to package directions, drain, and set aside.
- Sauté the ingredients: In a large skillet, heat olive oil, add sausage, onion, bell pepper, and garlic. Sauté until softened. Add olives and pepperoni.
- Combine and simmer: Add marinara sauce and Italian seasoning to the skillet. Simmer for a few minutes. Toss in cooked tortellini.
- Assemble and bake: Transfer the mixture to a baking dish. Top with cheeses. Bake for 20–25 minutes until bubbly and golden.
- Rest and garnish: Let it rest for 5 minutes before serving. Garnish with basil or parsley.
