Description

This Tater Tot Chicken Pot Pie is a delicious twist on a classic comfort food dish. Creamy chicken and vegetable filling topped with crispy tater tots and melted cheese, baked to golden perfection.

Ingredients

Scale

For the Filling:

  • 2 cups cooked shredded chicken
  • 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For the Topping:

  • 3 cups frozen tater tots
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Prepare the filling: In a large bowl, mix together the shredded chicken, frozen vegetables, cream of chicken soup, sour cream, milk, garlic powder, onion powder, thyme, salt, and pepper until well combined. Spread the mixture evenly in the prepared baking dish.
  3. Top with tater tots: Arrange the tater tots in a single layer on top of the chicken mixture.
  4. Bake: Bake for 30 to 35 minutes, or until the tater tots are golden and the filling is hot and bubbly. If using cheese, sprinkle it over the top during the last 5 minutes of baking.
  5. Rest and serve: Let rest for 5 to 10 minutes before serving.

Notes

  • You can use rotisserie chicken for a quick shortcut.
  • Add sautéed onions or mushrooms for extra flavor.
  • For a crispier top, broil the casserole for 2–3 minutes at the end of baking.
