Scale
Meat and Vegetables
- 1 pound flank steak, thinly sliced against the grain
- 3 cups broccoli florets
- 2 green onions, sliced for garnish
Sauce and Seasonings
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 3 tablespoons brown sugar
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Oils and Cooking
- 2 tablespoons vegetable oil, divided
- Cooked white rice, for serving
Instructions
- Prepare the teriyaki sauce: In a small bowl, whisk together the low-sodium soy sauce, water, brown sugar, honey, rice vinegar, and sesame oil until well combined. Set this sauce mixture aside for later use.
- Cook the broccoli: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and sauté them for 3 to 4 minutes until they turn bright green and are tender yet crisp. Remove the broccoli from the pan and set it aside.
- Cook the beef: Add the remaining 1 tablespoon of vegetable oil to the skillet. Arrange the thinly sliced flank steak in a single layer and cook for 2 to 3 minutes on each side, or until browned and nearly cooked through.
- Add aromatics: Stir in the minced garlic and grated fresh ginger with the beef, cooking for about 30 seconds until fragrant to enhance the flavor.
- Combine broccoli and sauce: Return the cooked broccoli to the pan. Pour in the prepared teriyaki sauce, stirring to coat the beef and broccoli evenly.
- Thicken the sauce: Add the cornstarch-water mixture to the skillet. Cook for 1 to 2 minutes, stirring frequently, until the sauce thickens to a glossy glaze.
- Garnish and serve: Remove the skillet from heat. Sprinkle sesame seeds and sliced green onions over the stir-fry. Serve hot over cooked white rice for a satisfying meal.
Notes
- For a gluten-free version, substitute tamari for the soy sauce.
