Main Ingredients
- 2 Tablespoons Olive Oil, divided
- 12 oz Broccoli Florets
- 1 pound Ground Beef
- 1″ piece Ginger, minced (optional)
- 2 cloves Garlic, minced (optional)
- 1 cup Teriyaki Sauce
Spicy Mayo Sauce
- 1/4 cup (60g) Light Mayo
- 1 1/2 Tablespoon (23g) Sriracha or Chili Garlic Sauce
- 1 Tablespoon (21g) Honey
- 1 Tablespoon (15g) Rice Vinegar
- 1/2 teaspoon Garlic Powder
To Serve & Garnish
- Rice or Cauliflower Rice
- Toasted Sesame Seeds
- Scallions, thinly sliced
Instructions
- Prepare the sauce: In a small bowl, mix together the light mayo, sriracha or chili garlic sauce, honey, rice vinegar, and garlic powder until well combined. Set aside to use as a spicy and tangy accompaniment.
- Cook the broccoli: Heat a skillet over medium-high heat with 1 tablespoon of olive oil. Add the broccoli florets and cook without stirring for 2-3 minutes until slightly charred on one side. Flip and cook for another 2-3 minutes until tender-crisp. Remove the broccoli from the skillet and transfer to a bowl; set aside.
- Brown the ground beef: In the same skillet, add 1/2 tablespoon olive oil. Add the ground beef and cook on one side until browned before breaking it apart. Continue cooking until fully browned and cooked through.
- Add aromatics: Create a small well in the center of the cooked beef. Pour in the remaining 1/2 tablespoon olive oil, then add the minced ginger and garlic. Cook for 30 to 60 seconds until fragrant, then stir everything together with the beef.
- Add teriyaki sauce: Pour the teriyaki sauce over the beef mixture. Stir well to combine and cook for 1-2 minutes until the sauce thickens and sticks nicely to the beef.
- Combine with broccoli and finish: Return the cooked broccoli to the skillet and stir well to incorporate. Turn off the heat, ensuring everything is evenly mixed and coated with sauce.
- Serve: Spoon the teriyaki beef and broccoli mixture over warmed rice or cauliflower rice. Garnish with toasted sesame seeds and thinly sliced scallions, if desired, and serve immediately.
Notes
- The ginger and garlic are optional but add wonderful aroma and flavor; feel free to omit if unavailable.
- For a lower-carb option, use cauliflower rice instead of regular rice.
- Adjust the sriracha amount in the mayo sauce to control spiciness.
- Make sure to slightly char the broccoli for added texture and flavor.
- This dish pairs well with steamed rice, jasmine rice, or cauliflower rice.
