Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Additional Mix-Ins:

  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 3/4 cup milk or semi-sweet chocolate chips

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips and mini marshmallows.
  4. Bake: Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 9–11 minutes, or until the edges are lightly golden and the centers are soft. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For gooier marshmallows, press a few extras on top before baking.
  • You can also toast the marshmallows under the broiler for a smoky flavor.
