  • 1 cup pico de gallo
  • 1 avocado, sliced
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup sour cream or Greek yogurt
  • Fresh cilantro leaves
  • Lime wedges for serving


Instructions

  1. Cook the Turkey: In a large skillet over medium heat, cook ground turkey until no longer pink, breaking it apart with a spoon. Drain any excess liquid if needed. Stir in taco seasoning and water, reduce heat, and simmer for 3–4 minutes until thickened.
  2. Assemble the Bowl: Divide cooked rice evenly among serving bowls. Top with seasoned turkey, black beans, corn, and pico de gallo. Add sliced avocado, shredded cheese, a dollop of sour cream or yogurt, and garnish with cilantro. Serve with lime wedges for squeezing over the top.

Notes

  • For a lighter version, use cauliflower rice instead of regular rice.
