For the Taco Seasoned Turkey:
- 1 lb ground turkey

- 1/2 cup water
For the Bowl Assembly:
- 2 cups cooked rice (white, brown, or cilantro-lime)
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1 cup pico de gallo
- 1 avocado, sliced
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup sour cream or Greek yogurt
- Fresh cilantro leaves
- Lime wedges for serving
Instructions
- Cook the Turkey: In a large skillet over medium heat, cook ground turkey until no longer pink, breaking it apart with a spoon. Drain any excess liquid if needed. Stir in taco seasoning and water, reduce heat, and simmer for 3–4 minutes until thickened.
- Assemble the Bowl: Divide cooked rice evenly among serving bowls. Top with seasoned turkey, black beans, corn, and pico de gallo. Add sliced avocado, shredded cheese, a dollop of sour cream or yogurt, and garnish with cilantro. Serve with lime wedges for squeezing over the top.
Notes
- For a lighter version, use cauliflower rice instead of regular rice.
